Homemade Caramel Frappuccino Cupcakes

Long time no see! It has been awhile since I last posted... I have been busy with graduating school and working full time at the hotel. I have been baking since I last posted my Resume blog. I have been baking for holidays, birthdays, and just for fun.


The last dessert that I made was one of my favorites and I cannot wait to try it out again. I came across this recipe from another blog and I told myself I had to try it out when I had time. It is a recipe for homemade cupcakes. I have tried to bake homemade cupcakes for years and never found a recipe that I like because the cupcakes always turn out very dense and heavy. I was relieved when I finished baking the cupcakes and took a bite before serving them to my friends and family. The cupcake was... AMAZING! It was so soft and moist. The frosting was perfect and not too sweet. And the caramel in the cupcake and drizzled on top of the cupcake was the perfect accessory!

Chocolate Dipped Strawberries

Hello,

It has been a while since I have last blogged! I have been very busy with my new job at the hotel. I hope you all are having a great Saturday night and I hope you all have a great Valentines Day tomorrow. Unfortunately, I will be working a 3pm-11:30pm shift, so I have a date with work!! But for all of you lucky people who have the day off, I have a VERY simple recipe that takes only minutes to create... Chocolate Dipped Strawberries! :)

First, you will need a double boiler. I have a double boiler made by the brand "Bonjour".


If you don't have time to go out and buy a double boiler, you can use a regular pot & a metal or glass bowl. You will want to add a little bit of water to the pot and then set the glass or metal bowl on top of the pot of water.


Once you have your double boiler ready, take one stick of "unsalted" butter and cut it into cubes. Next, turn on the stove to Medium heat. Add the cubes of butter to the bowl.


Now that the butter is slowly starting to melt, add 1 whole bag of chocolate chips. For this recipe I used "Dark Chocolate". Another good chocolate to use is "Semi-Sweet" chocolate chips.


Let the chocolate sit on top of the butter for about a minute or two and let them incorporate. After about two minutes stir the chocolate and butter, and keep stirring so that the chocolate doesn't clump. After it is completely smooth, add about a cap full of "Olive Oil". The little bit of oil makes the chocolate look shiny.



Now that the chocolate is done melting, wash the strawberries. After the strawberries are washed and dried, put them into a bowl. Next, pour the chocolate mixture into a separate bowl. Then, get a baking sheet and line it with parchment paper. If you don't have parchment paper, you can use foil. Now you are ready to dip your strawberries!!








Now that your strawberries are all dipped into the chocolate mixture, put the tray into the refrigerator for about 15-20 minutes. Once the chocolate is hardened, you may now serve your strawberries. Enjoy!
